Pecan Nut Cracker & Pecan Pie

I have to let the world know that I have found a great invention! It is called the Texan York Pecan Nut Sheller. I bought it Monday and thank goodness it did not cost me an arm and a leg either. I will tell you a little about it.  The Texan York Pecan Nut Sheller is used with one hand and it cracks one nut at a time. The handle is red and if something breaks on it you can purchase replacement parts, imagine that.  Also, it has enough power in the end that actually cracks the nuts so that you do not have to strain and hurt your hands to crack them. This is the only hand held nutcracker that I have ever found that works!  The nuts will not slip out of them.  This nut cracker has a little compartment that the nut goes in.  There is a shield to prevent the shell from flying everywhere.  I've never had a nut slip out!

My church is having a bake sale in two days and I signed up to make four homemade pecan pies. What was I thinking, right?  Well, I chose that type of pie because I actually have a Pecan tree in my back yard.  I encountered a small problem though, I usually do not need that many pecans at one time so I just crack and shell them each by hand, but to have enough pecans for four pies that would take me forever and it would be a pain in the hand, literally.  So, I found the Texan York Pecan Nut Sheller.  I used that to crack all my nuts and I was finished in no time!  After finding sucha  great pecan cracker, volunteering to make so many homemade pies was not such a bad idea. Now I just hope people buy them so it was not a waste for me to make them. This nut cracker will come in handy at Easter for me also, because I like to make Pecan Pies for my friends and family.  Here is the recipe I used if anyone would like to try it:

Pecan Pie

Ingredients:

 

1 (9 inch) Pie Shell, pre-baked 10-12 minutes

3/4 cup White Sugar

3/4 cup Light Corn Syrup

3 Eggs, beaten

1 teaspoon Vanilla Extract

1 pinch Salt

1 cup chopped Pecans

 

Preparation:

 

1. Combine sugar, corn syrup, eggs, vanilla and salt in a large bowl.

 

2. Add pecans and be sure to coat the nuts well.

 

3. Pour the pecan pie filling into your pie shell.

 

4. Bake for 45 minutes. After 30 minutes, check to see if the pie crust is getting too brown, if so cover edges with foil.

 

5. Do not over bake. Remove when pie filling is firm around its edges and slightly soft but set in center.

 

Oh by the way I read in the instructions that the nut cracker can also be used for Brazil nuts, English Walnuts, Almonds, other nuts and get this, Shellfish! That is if you remove the shield.  That is pretty neat if you ask me.
