Tips for cooking with nuts

Nuts are enormously widely used for cooking. They really are in so many dishes you might be suprised just how much you'd miss them if we didn't have them. Fragrant vegetables left next to nuts will transfer their odor to the nuts after a while. Don't leave nuts uncovered near other food if you want to prevent this problem. Cover them either with heavy plastic wrapping or seal them in a glass or heavy plastic pot. Smells can pass though a thin coating of plastic so you wil require something robust if you tend not to use glass.

A common question is whether to buy nuts with their shells on or shells taken off. The shell will have the effect of retaining the nut's freshness for longer. Think about how you want to use them - buying in volume to use over a long period pretty much requires buying with their shells on. This will depend on how many nuts you use in your cooking. If you work with them a lot (and we think you will) the saving from being willing to shell them yourself could be substantial.

A good cook will always do the right things prior to using nuts. Before putting them in the recipe, sampling the nuts is important. Unlike a number of other types of food, it's not always clear by any external signs that nuts are decaying. It's obvious if you've bitten into a decayed nut though, you won't want to eat it! Your guests will want to spit out your final meal if you put a spoiled nut in it without tasting it, as the flavour will carry over. Ensure you sample the nuts before adding them to avoid culinary disaster.

Pick a store that turns their stock over frequently when you buy your nuts. You have to bear in mind that the nuts will perish so you need to get them as fresh as possible from the store.

Sluggish turnover stores are things like a small family owned shop that has a tendency to sell their products in a trickle. You might end up buying walnuts that have been patiently waiting for a customer for 4 months. Their storage life could be over by the time you get the chance to buy them.

Longer storage times at home can usually be accomplished by buying your nuts at a store with swifter turnover, which is generally a large store or chain which has a sophisticated supply chain and might deal in an enormous amount of nuts every day.
